Chufa Sedge Overview

This species from western Asia and Africa is frost tender. The erect stems have a white stripe. Flowers are white flowers are borne in spikes surrounded by long leaf like bracts. The fibrous roots have small round tubers, about the size of a pea, hanging from them. These tubers are rich in oil and are edible, being sold commercially in southern Europe.
