Petroselinum crispum 'Eagle' commonly known as Parsley Root 'Eagle' is is a biennial but is best grown as an annual. It is an extremely useful culinary herb for its familiar leaves and stalks, but also for its small edible roots that somewhat resemble parsnips. Used to make a delicious vegetable stock along with carrots, onions and other garden vegetables, these roots are rich in vitamins, minerals and flavonoids. Parsley root 'Eagle' is fully to frost hardy and doesn't freeze if left in the ground. An easy to grow vegetable green, it likes full sun or light shade and prefers a moist, well-drained soil. However, the leaves can become course in the second year.
