Genus containing around 144 herbaceous or evergreen perennial species with characteristic spicy rhizomes and inflorescences resembling red or yellow pine-cones in overall appearance. They originate from Southeast Asia, with many species found across China, Thailand, New Guinea and India. This genus includes true ginger, a plant utilised for culinary and medicinal purposes. Species within this genus are used for slightly different purposes, some species for their showy flowers and their stems, others for their classic spicy rhizomes, which may be powdered, candied, dried or used whole in cooking.
